Hydra-Green Honeydew & Cucumber Salad with Dill and a Lime Vinaigrette

Dressing
- 1/3 cup olive oil
- zest of one lime
- juice of two limes
- 1 tsp honey
- 1 tbsp white wine vinegar
- 1 tsp salt
Salad
- 1 honey dew melon
- 1 large English or Armenian cucumber
- a handful of fresh dill
- bee pollen
- a small handful of crushed pistachios
Deseed and chop the melon into large, irregular chunks. Lightly peel the skin of the cucumber and chop irregularly as well. Add both to a large bowl.
Make the dressing by simply adding all the ingredients to a container and shaking very well. Pour over the melon and cukes, add the fresh dill and crushed pistachios on top and toss well.
